Mini Blueberry Muffins Recipe

Makes about 24 mini muffins

Ingredients:

  • 1 ½ cups (190g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ⅓ cup (80ml) vegetable oil or melted butter
  • 1 large egg
  • ½ cup (120ml) buttermilk or regular milk with a splash of lemon juice
  • 1 tsp vanilla extract
  • 1 cup (150g) fresh or frozen blueberries
  • Optional: a sprinkle of sugar for a lightly crisp top

Instructions:

  1. Preheat: Set your oven to 190°C (375°F) and line a mini muffin tray with paper liners.

  2. Mix dry ingredients: In a large bowl, combine flour, sugar, baking soda, baking powder, and salt.

  3. Blend wet ingredients: In another bowl, whisk together the oil (or butter), egg, buttermilk, and vanilla extract until smooth.

  4. Combine: Gently fold the wet ingredients into the dry ingredients. It’s okay if the batter has a few lumps—no need for perfection.

  5. Add blueberries: Carefully fold in the blueberries. If using frozen, toss them in a bit of flour beforehand to prevent them from sinking.

  6. Fill the tray: Spoon the batter into the mini muffin cups, filling each about ¾ full. A sprinkle of sugar on top gives them a golden, delicate crunch.

  7. Bake: Place the tray in the oven and bake for 10–12 minutes, or until a toothpick inserted into the center comes out clean.
